Tabouli

It's starting to get hot and I'm losing my motivation to cook. So I give you a recipe that requires no cooking at all. Tabouli is a simple refreshing Mediterranean salad that's easy, fancy and really good for you. Enjoy! Tabouli 1 cup bulgar wheat (This is available in bulk at the health food store or over by the other grains in nice groceries.) 2 cups water 1 cucumber 1 tomato 3 scallions 1 bunch fresh parsley Sauce 1/3 to 1/2 cup olive oil 1 juiced lemon 1 TBSP dijon mustard salt/pepper Add bulgar wheat and water to a glass bowl. Cover with plastic wrap and let sit for 1-2 hours. You'll know it's done when all the water is absorbed and the wheat is soft. Dice vegetables. Mix sauce. Combine all ingredients and serve.
