Who likes the cold?

By Penny Stine

Not me, but some of the plants in my garden are extremely happy with it.

Check 'em out.

This is pak choi toi choi, which, as anyone who knows me knows... I chose it for the name. Who could resist planting something called pak choi toi choi? It's a baby bok choy and it's supposed to be a cold-loving plant that's ready to pick in 40 days or something crazy like that. I started these plants in the house and transplanted them a couple of weekends ago, either on 4/12 or 4/19. I think it will be a little longer than 40 days, since it's been two weeks (more or less) and it looks more like premature bok choy at this point.

Peas and garlic are also happy in the cold weather, as are lettuce and beets. I didn't take a pic of my beets and lettuce, but they're also looking quite pleased with their surroundings.
