Bagel fans flock to Einstein Bros Bagels

Nearly 200 people camped in front of the new Einstein Bros. Bagels restaurant Monday night, to be among the first 100 customers rewarded with a year’s worth of free breakfasts.

“We had such an eclectic group out here,” said owner John Cassity of the early-morning turnout. “I just felt humbled that there are such die-hard Einstein (Bros.) fans.”

Many customers said they had been waiting a long time for the national chain to finally reach Grand Junction. Kelley Faria, a former Denver resident, said, “I used to eat here every day in high school, so I’m really psyched about this.”

Others agreed. Ray Shirley said he always eats at Einstein Bros., “wherever I can find one,” citing the comfortable atmosphere and quality bagels at the restaurant. Monday, he had a bacon-cheddar sandwich for breakfast and said it was fabulous.

Einstein Bros. is a franchise started 18 years ago in Lakewood, Cassity said. There are now 380 locations nationwide. “Customers are lifelong fans,” he said.

Cassity and his wife became fans of the bagel shop while living in Boulder. They recently moved to Grand Junction to raise their family and thought bringing the fast-casual franchise to the Western Slope was something that would be welcomed by the community.

“Grand Junction was just starving for sustainable fast-casual,” Cassity said.

Cassity said the restaurant was popular in metro locations because of the consistency of the food and its unique taste. The bagels are cooked using a special baking process, with an exact formula of dough, proofing temperature and humidity level, to create the perfect chewy bagel.

The new restaurant offers more than just a good bagel, though, serving panini sandwiches, fresh salads, soups and wraps.

The new Einstein Bros. Bagels is located at 2546 Rimrock Ave., Suite 100, just across the street from Wal-Mart. Store hours are 5:30 a.m. to 5:30 p.m. Monday through Friday, and from 6:30 a.m. to 5:30 p.m. both Saturday and Sunday.
