and rainbows

A number of years ago, my sister made a drink called otai, the recipe for which she got from some Tongan friends. It was made out of magic and rainbow juice, as far as I could tell.

I kind of remember watching her make it, but my memories of drinking it are this:

YAYYY!!!!! YUMMEEEEE!!!

It’s good, is what I’m saying.

I did a perfunctory Google search before creating this watermelon otai, which tastes like:

YAYYY!!!!! YUMMEEEEE!!!

To create it yourself, slice one medium seedless watermelon and discard the rind. Grate the fruit into a large bowl. Add 1 20-ounce can of crushed pineapple with the juice, 1 cup flaked coconut, 1 1/2 cup fat-free half-and-half, 3/4 cups sugar and 2 tablespoons lime juice and stir.

Add 2–3 cups ice and when the ice is mostly melted, stir the otai again, then ladle into glasses and serve. Refrigerate the rest in a covered container.
