Susan Barstow, New Castle — Peach Pie

Double pie crust: Susan suggests using a pie crust recipe calling for both butter and vegetable shortening. The combination makes a delicious, flaky crust. I googled and found many. You’ll find them in your cookbooks as well.


Note on Susan: She grew up in Palisade, taught school in Parachute and Rifle for 25 years, then taught in the Alaskan bush country and Kuwait. After spending some time in New Castle, she’s in the process of moving back home to Palisade. Her sister from Strawn, Texas, comes up to enter the contest with her and won a third place this year. Her other sister in Palisade hasn’t placed yet, but she hasn’t given up trying!

The Palisade Peach Recipe Contest and Festival is over, but the peach season isn’t. We’ve moved into the September peach season, filled with luscious varieties, some old favorites and many newer ones, all with that Palisade peach taste. How sweet it is.

This good news means you have time to make some of the prize-winning recipes from the 2016 Palisade Peach Recipe Contest held last month. Congratulations to all the winners. Your entries were delicious, as evidenced by our judges’ happy faces. But I must tell you, they didn’t have an easy job, there were so many delicious entries. It’s time to get cookin’ with those recipes with the abundance of peaches still available.

After talking with many growers, I learned some may have peaches just for another week, many will through the third week of September, while others will extend into October.
