Mom takes potato salad to Vegas
There’s going to be a lady on a plane heading from Grand Junction to Las Vegas tomorrow with a bag of “special potatoes” on her lap.
It’s not as weird as it sounds given that Frankie DeLaHoz is flying to the World Food Championships this weekend to enter her loaded baked potato salad in hopes of winning a $10,000 prize.
DeLaHoz made her potato salad, “on a whim” for the Pork and Hops Challenge that took place at Lincoln Park in September. She didn’t expect to win.
“I’m just not a mayo person so I changed it up with yogurt, green onion and chive dip, to really make the flavor pop,” DeLaHoz said. She wanted it to taste just like, if not better, than a loaded baked potato with all the fixin’s. It’s a recipe she had never made before and for the most part, made up as she went.
“It turned out refreshing and different. That’s what I wanted it to do,” she said.
DeLaHoz was working at Grand Junction Subaru when her son called with extreme excitement, talking about a $1,000 prize and a trip to Las Vegas.
The World Food Championships will take place at Bally’s with Adam Richman of the Travel Channel serving as host. The competition includes world-famous chefs, celebrity judges and a conglomerate of food competitors who have won a variety of competitions around the world.
The Best Potato Salad portion of the event is sponsored by Reser’s Fine Foods and Sam’s Club. Upon arrival, DeLaHoz will be given another $1,000 from Reser’s to cover room and board for the weekend.
DeLaHoz, a single mom, said she’s used to “making food go a long way.” Previously, she competed and won a prize for cooking at the Palisade Peach Festival.
“I love food, fine dining, and entertaining,” DeLaHoz said, “I like to pop the flavor and I think that’s what I’m going to do well with in this competition.”
DeLaHoz is mostly excited about enjoying the experience with her children, Damien and Danica.
“Whether I win first prize or last prize — I don’t care. How many people get to experience something like this?” she asked, “I’m just so excited.”
