Tamar Adler is not a fan of throwing things away, whether it's leftover ramen soup or apple pie. She gets to show off her strong repurposing ethic in her new 500-page cookbook “The Everlasting Meal Cookbook: Leftovers A-Z.” It's a comprehensive guide from Scribner for reusing leftovers, from potato cooking water to day-old sauerkraut. Adler turns old Pad Thai into an omelette, makes broccoli stems and wilted leaves into pesto, transforms old meatloaf into pizza, converts stale bread into bread pudding, adds old bacon fat to make her cornbread and even uses peanut shells as kitty litter.
When you're making a traybake, low-rimmed baking sheets outperform roasting pans. That's because they accelerate cooking and boost browning. But sometimes, a bit of crowding on the pan can be beneficial. That's the case with the spicy chicken alla diavolo by the cooks at Christopher Kimball’s Milk Street. You cluster bone-in, skin-on chicken around eight whole, peeled garlic cloves. The circle protects the cloves from the high heat of the oven as they cook up soft and sweet. You then mash and mix them with the chicken drippings for a quick pan sauce. Ample red pepper flakes and thyme flavor the chicken. And adding broccoli to the pan makes it a one-pan dinner.

Many Americans know only French-style omelets. But similar egg dishes in China are less fussy than the filled and folded bistro classic. Take egg foo young. Instead of the deep-fried dish in Chinese-American restaurants, Cantonese cooks use less oil and more crispy vegetables. That’s the style preferred by the cooks at Christopher Kimball’s Milk Street. Their veggie-packed omelet calls for cabbage, onion and bell pepper, but bean sprouts, mushrooms and scallions also work. The vegetables are stir-fried until crisp-tender, and then mixed with beaten eggs. To boost the protein, stir in chopped cooked shrimp, pork or chicken. A quick sriracha mayonnaise makes a spicy, complex addition.
In rugged parts of northern Spain, a homey dish called fabada asturiana is a satisfying winter staple. It includes several cured meats, dried beans and alliums slowly simmered together. The cooks at Christopher Kimball’s Milk Street make a version with canned white beans that pares back on the meat and comes together in just 30 minutes. Chorizo and ham lend deep flavor to the broth. And a pinch of saffron adds a Spanish flavor and fragrance, while giving the stew an alluring golden hue.
